Switch must be disconnected from the internet in order to play without updates.
The pre patched version does like to crash occasionally, you might run into some rare audio issues which are fixed by restarting checkpoint,
and a rare bug can cause the game to not respond to any inputs, if you get this you have to restart the entire console to fix it
