Played to around 76 % completion overall. Main story done, all random events encountered, purchased all real estates, at least tried most of the side missions and collectibles.
Overall the game plays fine with a stable framerate.

Noticed issues:
You can observe regular pop-in of lighting effects, shadows, geometry and vehicles. Occasionally foliage too.
Observed an NPC glitched into a dumpster.
As it is good old tradition in GTA, cars can disappear behind you as soon as you turn around.
The stock market still has a bug that has been in the game since release. Always save manually before investing into stocks. If you are affected by this bug, investing in any stock will not add anything to your portfolio and your money will be lost. If it happens, reload a previos save and try again.
Encountered NPC cars having pathing issues several times, causing crashes and even glitching through architecture.
Encountered several spawn issues after beating the main story when switching two Michael.
In one instance, his son Jimmy would spawn on front of his mansion standing on the road and blocking traffic.
In another instance, a short sequence was playing that was meant to show Michael and his son Jimmy coming back from a bike trip. But instead of spawning on the bike, Michael and his car would spawn a few meters above the bike, dropping to the floor and taking damage. The camera remained stuck in the position of Michael's car, but you could still move freely even outside of the shown camera angle.
The car seems to spawn in some glitched way most of the time. Also saw it clipping through the floor in front of the mansion once.

In a second test, we also took a closer look into graphics modes and encountered the following issues:

In Fidelity and Performance RT modes all three protagonists have oddities occur with their hair.
Michael's regular hairstyles appears spikey.

Franklins buzzcuts shrink in a strange square pattern on the back of his head when wet and in sunlight.

Trevor's bald spot has the appearance of more hair making him less bald in sunlight.

Weapons don't animate correctly with every second consecutive shot fired and in the case of the semi automatic shotgun and snipers the cocking/rechamber sound effect and animation don't play with every second shot fired.
Michael's buzzcut in the prologue has black lines on it in every display mode addition to having the same issue as Franklin's buzzcuts in the Fidelity and Perf RT modes.
