The Series X version included on disc is only a 200mb stub file that cannot be booted without updates. This disc also contains the 1.0.0.0 Xbox One version on disc, but in order to install it you must press the start button on the disc icon on the home screen (Only on the home screen), and hit "Manage Bundle". From there you can force the Xbox One build to install.
